Instant Pot Mac and Cheese
I am in the process of assembling a collection of recipes that my daughter can use when she is off to college next year. A limited additional Teal-Colored Instant Pot will be loaded along with the rest of the off-to-college paraphernalia. Although the clean-up is a little messy, the recipe is a cinch and can feed a small crowd. Serve with roasted cauliflower and grilled chicken (see Tropical Caesar for chicken recipe).

Ingredients:
1 tbsp olive oil or enough to coat the bottom of the Instant Pot
3-4 peeled and crushed garlic cloves
16 oz rigatoni pasta (recommend Trader’s)
4 cups water or more, enough to cover pasta completely (filtered preferred)
2 cups shredded Italian cheeses (recommend Quattro Formaggi, a blend of Parmesan, Asiago, Fontina and Provolone from Trader’s)
1/2 cup heavy cream
1/2 cup whole milk
2 tsp kosher salt
1 tbsp dry mustard
1/4 cup sifted all-purpose flour
Freshly cracked pepper
Place olive oil in Instant Pot and turn to sauté. Add garlic cloves and saute until light brown and then remove garlic.
Place pasta in Instant Pot. Add water and place cover on Instant Pot making sure that vent is in "sealing" position. Select manual setting (high) for four minutes. Do a quick release at end of cycle using caution to not get burned from the steam. If you have had to add water to cover the pasta for cooking, consider draining out some of the liquid (1/4 cup).
Select sauté function, and use a large wooden spoon and stir in cheese, cream, milk, salt and dry mustard. The excess liquid will get absorbed by the pasta with a couple of minutes of stirring and a little heat from the sauté feature. To thicken, sprinkle in the flour while stirring. Keep cooking until the desired consistency and flour is cooked (uncooked flour is unsavory). Add salt and freshly ground pepper to taste.
Serve immediately, or place cover on Instant Pot with vent open and Instant Pot turned to "keep warm" setting. Alternatively, you can transfer to am ovenproof dish and put under the broiler for a minute or so to brown the top.
