Breakfast of Champions

Avocado Toast

One serving

Ingredients

  • 1 slice of toasted ciabatta, whole-grain, or gluten-free bread

  • 1/2 clove garlic

  • 1 egg, cooked over easy, seasoned lightly with salt and pepper

  • 1 small or 1/2 large ripe avocado, sliced

  • seasoning blend (love Everything but the Bagel Sesame Blend from Trader Joe’s)

  • drizzle of extra-virgin olive oil (EVOO)

  • 1/2 English cucumber, unpeeled and sliced

Rub fresh garlic clove on toasted bread. Layer egg and avocado. Generously sprinkle seasoning blend. Plate with cucumbers and enjoy.

Variation: Cook egg seasoning with Trader Joe’s freshly ground Lemon Pepper Blend in place of salt and pepper. When assembling, use additional seasoning on sliced avocado.
